Professor Hyung Joo Suh's research lab specializes in bioactive natural products, focusing on the functional properties and mechanisms of plant- and microbe-derived compounds for health and cosmetic applications. Key research directions include the development of anti-aging, anti-stress, and anti-fatigue agents using fermented botanicals such as red ginseng, rice bran, and mulberry extract. The lab also investigates the biochemical stability and kinetic behavior of natural pigments and antioxidants under various processing conditions. These studies aim to translate traditional herbal knowledge into evidence-based nutraceutical and cosmetic ingredients with enhanced efficacy and safety.

GABA/l-theanine mixture has a positive synergistic effect on sleep quality and duration as compared to the GABA or l-theanine alone. The increase in GABA receptor and GluN1 expression is attributed to the potential neuromodulatory properties of GABA/l-theanine combination, which seems to affect sleep behaviour.
The anti-stress and anti-fatigue effects of a hot water extract of fermented rice bran (FRB) were investigated with Saccharomyces cerevisae IFO 2346 on rats or mice. Oral administration (1 g/kg/day) of a hot water extract of FRB inhibited major changes in weight of the adrenal, thymus, spleen and thyroid, showing the anti-stress effect. A hot water extract of FRB also inhibited the increase of GPT and LDH activity, cholesterol and serum glucose levels. Administration (1 g/kg/day) for 2 weeks sig
The objective of this study was to evaluate the anti-aging potential and skin safety of red ginseng (RG) and fermented red ginseng (FRG) using Lactobacillus brevis for use as cosmetic ingredients. Concentrations of uronic acid, polyphenols, and flavonoids, and antioxidant activities were greater in FRG compared to RG. The contents of total ginsenosides were not significantly different. However, the ginsenoside metabolite content was higher in FRG (14,914.3 μg/mL) compared to RG (5697.9 μg/mL). T
The effects of temperature and pH on color degradation kinetics of the mulberry fruit extract were investigated. The absorbance at 510 nm was decreased with increase of heating time, but that at 420 nm was increased with the increase of heating time at 100 degrees C. The change of the browning index (A510/A420) was increased with increase of pH and was lower at pH 2.0 than that at pH 5.0. The browning index variation was adequately described by both the first-order and the zero-order kinetic. Ho
HHPE used for red ginseng processing contributes to enhanced extraction efficiencies of functional materials such as ginsenosides through cell structure modification.
Abstract This study presented the antioxidant activities of the Korean traditional lotus liquor (Yunyupju) made from lotus blossom and leaves. The antioxidant activities are dose-dependent and reached a plateau (about 80% inhibition) when the concentration of lotus liquor exceeded 25 μg in a modified linoleic acid peroxidation induced by haemoglobin. The concentrations to attain one absorbance unit at 700 nm were 23.6 ± 1.2 μg for Butylated hydroxytolene (BHT), and 45.7 ± 5.4 μg for lotus liquor
