About the Lab
Professor Kim Jong-geon's research lab focuses on functional foods, probiotics, and nutritional interventions to improve metabolic health and prevent lifestyle-related diseases. Key research directions include the hypocholesterolemic effects of probiotics—particularly those isolated from traditional Korean fermented foods like kimchi—and their mechanisms in regulating lipid metabolism. The lab also investigates the anti-osteoporotic potential of bioactive dairy proteins and the impact of dietary factors, such as food waste in animal feed, on meat quality and human health. Additionally, the lab explores musculoskeletal health through exercise and environmental interventions in sedentary populations.
