Professor Eiseul Kim's research lab specializes in food microbiology and microbial diagnostics, with a focus on the accurate identification, characterization, and monitoring of beneficial and pathogenic bacteria in food and agricultural environments. The lab develops advanced molecular and mass spectrometry-based methods for rapid and precise detection of probiotic and pathogenic lactic acid bacteria, staphylococci, and enterococci, while also investigating antimicrobial resistance genes in food-producing animals. Their work bridges food safety, probiotic development, and One Health by integrating genomics, bioinformatics, and analytical technologies.

The method developed in this study is able to rapidly and accurately distinguish different species of Lactobacillus, and can be used to monitor specific Lactobacillus species in foods such as probiotics and dairy products.
