Professor Seongbeom Cho's research lab specializes in foodborne pathogens, with a focus on molecular epidemiology, antimicrobial resistance, and the One Health approach linking human, animal, and environmental health. The lab investigates the genetic diversity and transmission dynamics of zoonotic pathogens such as *Salmonella* and *Campylobacter jejuni*, utilizing advanced molecular typing methods like MLVA and VNTR analysis. A key research direction involves understanding the impact of agricultural practices and environmental factors on pathogen prevalence in livestock, particularly dairy cattle, and assessing the role of diet and geography in human exposure to contaminants like mercury. The lab also explores the prebiotic potential of functional foods, such as red ginseng, in modulating gut microbiota in both humans and companion animals.

Simplified multiple-locus variable-number tandem repeat analysis (MLVA) was developed using one-shot multiplex PCR for seven variable-number tandem repeats (VNTR) markers with high diversity capacity. MLVA, phage typing, and PFGE methods were applied on 34 diverse Salmonella Enteritidis isolates from human and non-human sources. MLVA detected allelic variations that helped to classify the S. Both dietary and non-dietary factors were associated with WBHg levels in the Korean population. There is significant geographic variation in WBHg levels; residents living in the mid-south have higher WBHg levels. We speculate that uncontrolled geographic characteristics, such as local soil/water content and specific dietary habits are involved.
Differences in allele distribution and genetic diversity of VNTR loci in S. Enteritidis isolates from different sources were found. Polymorphism in most of the VNTR loci was more frequent among human S. Enteritidis isolates than isolates from chickens or eggs. Therefore, VNTR profiles of S. Enteritidis isolates from a specific source should be further evaluated as potential markers in epidemiologic investigations to trace S. Enteritidis to their probable source.
This study compared the antimicrobial susceptibility of Shiga toxin-producing Escherichia coli (STEC) isolates from organic dairy farms, conventional dairy farms, and Minnesota county fairs.
