About the Lab

Professor Jae-Joon Han's research lab specializes in developing sustainable biopolymer-based materials for food and packaging applications. The lab focuses on creating plant-protein-based meat analogues, edible films, and active packaging systems using natural polymers such as rice protein, whey protein, zein, and starches. Key research directions include enhancing the functional properties of biodegradable films and coatings through polymer modification, incorporation of natural antioxidants, and the development of innovative encapsulation techniques for micronutrients. The lab also pioneers oxygen-scavenging systems and barrier coatings to extend food shelf life and improve food safety.
