Professor Jeong-woo Park's research lab focuses on molecular mechanisms underlying human diseases, with a strong emphasis on cancer biology, genomic instability, and neurodevelopmental regulation. The lab investigates retrotransposon-driven mutagenesis in aging and disease, particularly long interspersed nuclear element-1 (L1) activity in colorectal epithelium, and explores the role of transcription factors like PAX6 and NF-κB in development and carcinogenesis. Additionally, the lab examines the therapeutic potential of natural compounds such as curcumin and the pathophysiology of lipid oxidation in food and biological systems. Abstract The role of oxygen‐limitation on lipid oxidation and moisture content were tested in corn oil heated to 60, 100, and 140 °C.
