Professor Jung Mi Lee's research lab specializes in green and sustainable bioprocessing, focusing on the efficient extraction of natural products from biomass for pharmaceutical and biochemical applications. The lab investigates novel enzymatic pathways in microbial systems, particularly alternative polyamine biosynthesis in bacteria like *Vibrio cholerae*, and explores the functional and evolutionary diversity of β/α-barrel fold decarboxylase enzymes. A key interest lies in understanding enzyme specificity and substrate promiscuity in these systems, with implications for metabolic engineering and biocatalysis. The lab also examines the safety and behavior of green solvents, such as choline chloride-based deep eutectic solvents, in biochemical contexts.

Polyamines are small organic cations found in all cells, and the biosynthetic pathway is well described in eukaryotes and Escherichia coli. The characterized pathway uses decarboxylated S-adenosylmethionine as the aminopropyl group donor to form spermidine from putrescine by the key enzymes S-adenosylmethionine decarboxylase and spermidine synthase.
