Professor Min Seok Lee's research lab focuses on interdisciplinary studies spanning food science, biomedical inflammation markers, and materials science. The lab investigates muscle-specific biochemical and palatability traits in beef to improve meat quality, explores inflammatory biomarkers like NLR and PLR in psoriasis and psoriatic arthritis for clinical diagnostics, and develops advanced models for dislocation dynamics in metallic materials. These diverse research directions reflect a strong emphasis on both biological systems and material behavior at the microscale.
