홍세옥 교수의 연구실은 주로 대사체학과 미생물군집 분석을 융합하여 발효식품, 장내 미생물, 그리고 건강 기능성 물질 간의 상관관계를 탐구하고 있습니다. 김치, 포도주, 인삼 등 다양한 식품에서 발생하는 대사 변화와 그 영향을 GC-MS, 16S rRNA 시퀀싱, NMR 분석을 통해 정량적으로 규명하고 있으며, 특히 발효 과정에서의 미생물-대사체 상생 관계에 초점을 맞추고 있습니다. 이 연구들은 건강 기능성 식품 개발과 만성질환 예방 전략 수립에 기여하고 있습니다.
