JaeHwan Lee 교수의 연구실은 식물성 기름 및 천연 항산화제의 산화 안정성과 항산화 활성을 중심으로 한 식품 화학 분야의 연구를 전개하고 있습니다. 주로 소이, 참기름 등 식물성 원료에서 추출한 이소플라빈과 세사몰과 같은 천연 항산화 성분의 정량 및 기능성 평가를 통해 식품 안정성 향상 기술을 개발하고 있습니다. 또한, 열처리 조건과 산소 조건이 지방 산화에 미치는 영향을 분석함으로써, 가공 과정에서의 산화 반응 메커니즘을 규명하고 있습니다.

Seventeen Ohio soybeans were screened for isoflavone content and antioxidant activity. Isoflavone content was determined by C(18) reversed phase high-performance liquid chromatography coupled with a photodiode array detector.
