이 교수의 연구실은 육류의 품질 특성과 생화학적 특성 간의 상관관계를 분석하는 데 초점을 맞추고 있으며, 특히 소의 주요 근육 부위에서의 맛과 육질 특성의 변동성과 그 기전을 규명하는 데 기여하고 있습니다. 또한 식품 안전성 및 천연 방부제의 복합적 효과를 평가하는 연구를 통해 자연계 생분해성 방부제의 효능 최적화에 기여하고 있습니다. 최근에는 해조류, 특히 라버의 영양 기능성과 가공 처리가 기능성 성분에 미치는 영향에 대해서도 연구를 확장하고 있습니다.
