바이크 무열 교수의 연구실은 주로 식품 고분자, 특히 전분의 구조-성질 상관관계와 노화화 거동을 중심으로 연구를 진행하고 있습니다. 빵, 쌀 전분, 콩 전분 등 다양한 식품 전분의 열적 거동, 수분 이동, 지질 산화 안정성, 그리고 글루코스 매트릭스의 상전이 특성에 대한 다학제적 접근을 통해 식품의 품질 유지 메커니즘을 규명하고 있습니다. 특히 전분의 탈착화(리트로그레시온), 유리전이 온도, 수분 분포 변화 등에 대한 분석을 핵심으로 삼고 있습니다.

ABSTRACT Standard white breads were stored with or without crust at 25°C in hermetic pouches. During two weeks of storage, the crumb moisture content and water activity ( a w ) decreased significantly when stored with crust. Abstract The effects of various antioxidants and RH on the oxidative stability of microencapsulated fish oil powder were investigated using PV and thiobarbituric acid tests. The thermomechanical properties of breadcrumb were investigated using dynamic mechanical analysis (DMA) and differential scanning calorimetry (DSC). The main transition (T(1), near 0 degrees C) shifted to lower temperature with added glycerol due to freezing point depression. The effects of storage methods and glycerol on the aging of breadcrumbs were studied using solid-state (13)C CP/MAS NMR. After baking, a shift in C(1) peaks from triplet (A-type) to singlet (V-type) was observed.
