Weon-Sun Shin 교수의 연구실은 식물성 단백질과 첨가물의 기능성 및 안정성을 극대화하기 위한 생체활성 성분의 정제 및 응용을 중심으로 연구를 진행하고 있습니다. 특히 콩류의 조리수를 활용한 식물성 단백질 대체재 개발, 초음파 처리를 통한 단백질 구조 조작, 그리고 마이크로아키텍처 제어를 통한 기능성 소재 설계에 초점을 맞추고 있습니다. 또한, 자연계의 색소 및 항산화 물질을 활용한 식품 및 건강기능성 식품의 개발도 함께 진행 중입니다.
