Jae-Hyung Mah 교수의 연구실은 주로 병원성 곰팡이 및 식품 미생물의 발육 조절 메커니즘과 생물학적 안전성을 중심으로 연구를 진행하고 있습니다. 특히 아스페르길러스 편도균의 무성포자 형성 조절 기전과 발효 식품 내 생체아민의 축적 메커니즘, 그리고 식품 산업에서의 박테리아 포자 방지 전략에 초점을 맞추고 있습니다. 또한 천연 항균 물질과 생분해성 생분해성 필름을 활용한 식품 안전성 향상 기술 개발도 함께 진행하고 있습니다.

Biodegradable poly(butylene adipate-co-terephthalate) (PBAT) films incorporated with nisin were prepared with concentrations of 0, 1000, 3000, and 5000 international units per cm(2) (IU/cm(2)). All the films with nisin inhibited Listeria innocua, and generated inhibition zones with diameters ranging from 14 to 17 mm. The water vapor permeability and oxygen permeability after the addition of nisin ranged from 3.05 to 3.61 x 10(11) g m m(-2) s(-1) Pa(-1) and from 4.80 x 10(7) to 11.26 x 10(7) mL.m
Summary The objective of this study was to investigate the antibacterial activity of levan compounds, including high‐molecular‐weight levan, low‐molecular‐weight levan and difructose dianhydride IV ( DFA IV ).
