Cheorun Jo 교수의 연구실은 가금류 육류의 품질 향상과 안정성을 위한 천연 항산화제의 기능성 및 응용을 중심으로 연구를 진행하고 있습니다. 특히 약용식물 추출물, 해양 유래 생체활성肽, 식물성 에센셜 오일 등 천연 성분을 활용한 지방산화 억제 및 육류 품질 개선 기술 개발에 중점을 두고 있으며, 냉장 저장 중 육류의 산화와 품질 저하를 방지하는 데 기여하는 다양한 생리활성 물질의 기전을 규명하고 있습니다.

ABSTRACT Oil emulsions containing amino acids, glutathione, bovine serum albumin, gelatin, or myofibrillar proteins were prepared. The emulsions were irradiated at 0, 2.5, 5.0, or 10.0 kGy absorbed doses and analyzed for volatile compounds.
