Ehab S. Eshak教授の研究室は、食事と生活習慣が慢性疾患に与える影響に注目し、特にビタミンの食事摂取と2型糖尿病、脳卒中、心血管疾患のリスクとの関連を疫学的・疫学的・行動的アプローチで解明しています。日本を対象とした大規模コhort研究を基盤に、栄養素の摂取と健康リスクの関連を精密に分析しており、特に水溶性・脂溶性ビタミンの役割に焦点を当てています。また、母体の食事摂取が胎児の出生時サイズに与える影響や、避妊に関する誤解の影響についても社会的要因と健康行動の関連を研究しています。
