東教授の研究室は、食事・栄養因子と慢性疾患の関連に注目し、特にマグネシウムや食物グリセミックインデックス、プロバイオティック fermented ミルク、地中海食などの食事パターンが2型糖尿病や心血管疾患、がんなどの発症リスクに与える影響を、メタアナリシスを用いて系統的・定量的に解明しています。疫学的・臨床的エビデンスの統合的分析を通じて、食事と健康の因果関係を解明する国際的な研究が特徴です。
