Kento Koyama教授の研究室では、食品の新鮮さや微生物の挙動を非破壊的・定量的に評価するための画像処理技術と統計的モデリングの融合を柱としています。特に、細菌の生存・増殖挙動の不確実性をベイジアン統計や確率分布を用いて定式化し、食品の微生物リスクをより現実的に評価する手法の開発を進めています。また、ラマン分光法と機械学習を組み合わせた新規なバイオセンシング技術の構築にも取り組んでいます。
