Professor Youn Young Shim's research lab focuses on the discovery, characterization, and functional application of bioactive compounds from plant sources, particularly flaxseed and legumes. The lab investigates bioactive peptides such as cyclolinopeptides (linusorbs) and orbitides, as well as functional components like flaxseed gum and aquafaba, with an emphasis on their structural properties, biological activities, and potential in food and health applications. Research spans from molecular characterization using mass spectrometry and genomics to evaluating functional properties in food systems, including foam stability and emulsification. The lab also develops systematic approaches for peptide nomenclature and explores sustainable utilization of plant by-products.

Summary Flaxseed gum ( FG ) was prepared from six Canadian flaxseed ( Linum usitatissimum L.) cultivars. Yield, neutral sugar content, acidic sugar content and protein content varied significantly among cultivar FG extracts.
