본 연구에서는 자기결정성이론의 핵심개념인 인간의 세 가지 기본 심리적 욕구를 측정하는데 사용하기 위해 Ryan과 Deci가 오랜 연구 결과1)로 개발한 “기본 심리 욕구 척도”에 근거하여 청소년들을 위한 한국형 기본 심리 욕구 척도를 개발하고 타당화하는 것을 목적으로 하였다. 특히 한국의 고유한 문화적 특성을 반영한 척도를 개발하기 위하여 문항작성을 위한 자료수집 과정에 질적 연구방법을 포함시켰다. 삼차에 걸친 자료수집과 문항 및 척도의 양호도 분석 후에 세 가지 하위 구인인 자율성, 유능성과 관계성에 대한 욕구를 측정하기 위해 하위척도 당 6문항씩, 총 18문항의 최종척도를 구성하였다. 구성된 척도의 심리측정학적 동등성 검증을 실시한 결과 본 검사가 중, 고등학생들에게 공통적으로 사용될 수 있음을 확인하였다. 또한 본 검사와 타 동기척도와 심리적 안녕감과의 관련성에 대한 분석 결과는 준거관련 타당도에 대한 증거를 제공하여 본 연구에서 개발된 척도의 활용가능성을 시사하였다.

제분방법을 달리하여 제조한 건식, 습식 및 반습식 쌀가루를 사용하여 제조한 쌀빵의 품질특성을 비교하였다. 습식제분 쌀가루의 제조 시 쌀의 수침온도를 25℃와 55℃로 하였으며 반습식 처리로서 쌀을 살수처리한 후 제분하였다. 쌀가루에 밀가루를 7:3의 비율로 혼합한 복합분에 활성 글루텐을 첨가한 후 mixograph로 반죽의 특성을 측정한 결과 습식제분한 쌀가루에서 반죽시간과 안정성이 증가함을 보여주었다. 습식제분 쌀가루로 제조한 쌀빵이 건식제분과 반습식제분 쌀가루로 제조한 쌀빵에 비해 빵의 체적이 증가했으며, 특히 수침온도에 있어 55℃의 가온 수침처리가 쌀전분에 변화를 초래하여 상온에서 수침한 쌀가루에 비해 쌀빵의 체적을 향상시켰다. 쌀빵의 저장중 경도의 변화에서 습식제분 쌀가루로 제조한 빵이 가장 낮은 증가폭을 보여주었다.

본 연구에서는 콩과 콩 가공식품의 isoflavones 함량에 대한 기초 자료 구축을 위해 수원 작물시험장에서 분양받은 흰콩 41종, 검정콩 5종의 국산 콩 46품종과 두부, 된장 등 콩 가공식품의 isoflavones 함량을 분석하였다. 각 시료의 isoflavones 함량 -daidzeine과 genistein 유도체의 합은 건조 중량 1g당 함량으로 나타내었다. 46품종의 콩을 분석한 결과 isoflavones 함량은 $309{\sim}1610\;{\mu}g/g$ 의 범위로, 평균 $809\;{\mu}g/g$ 을 함유하고 있었다. 이 중 신팔달 2호의 isoflavones 함량이 가장 높았고 다원콩의 함량이 가장 낮았다. 청국장의 isoflavones 함량은 $1045\;{\mu}g/g$ , miso는 $1067\;{\mu}g/g$ 으로 된장의 $781{\mu}g/g$ 보다 높았다. 두부, 연두부, 순두부 및 유부의 isoflavones 함량은 각각 $650\;{\mu}g/g$

효소제와 유화제의 첨가가 쌀빵의 품질특성중 빵의 부피와 저장중 경도 변화에 미치는 영향을 조사하였다. 효소제로는 곰팡이 α-amylase(AMYL), 세균 α-amylase(NMYL), glucose oxidase(GO), 그리고 xylanase+hemicellulase(PTP)를 사용하였으며, 유화제로 sorbitan monostearate(SMS), glycerol monostearate(GMS), sodium stearoyl lactylate(SSL), glycerol ester+propylene glycol ester+sucrose ester+sorbitan ester(SP)를 첨가하여 그 효과를 비교하였다. 쌀가루에 AMYL, GO, 그리고 AMYL+GO 효소를 처리한 쌀빵의 비용적이 대조구 쌀빵에 비해 높게 나타났는데, 특히 AMYL을 첨가한 처리구에서 가장 높은 수치를 보여주었다. 쌀빵의 저장 중 경도 변화를 측정하였을 때 AMYL, NMYL, 그리고 GO를 첨가한 처리
