이성호 교수의 연구실은 환경 정화 및 생물학적 기능 조절을 중심으로 한 응용 생화학과 생물자원 활용 연구를 수행하고 있습니다. 농업 폐기물인 사과 잔여물의 이온 교환 능력을 활용한 구리 제거 기술, 박테리아에서 유래한 효소의 기능 개선을 통한 식품 안정성 향상, 그리고 염증 및 세포 신호 전달 경로에서의 단백질 상호작용 메커니즘 규명이 주요 연구 방향입니다. 특히, 환경 오염 제거와 의료 진단, 식품 산업 응용을 연결하는 다학제적 접근이 특징입니다.

15Abstract Removal of copper from a solution was investigated to evaluate the cation-exchange capacities of apple residues from agricultural wastes. The effects of solution pH, ionic strength, co-ion, ligands, initial metal concentrations, and particle size of apple residues were studied. Cyclodextrin glucanotransferase from Bacillus stearothermophilus ET1 (CGTase ET1) is a potential antistaling enzyme with cyclodextrin (CD)-forming activity. To reduce cyclization activity of CGTase ET1, phenylalanine residues at 191 and 255 were replaced with a glycine (F191G-CGTase ET1) and an isoleucine (F255I-CGTase ET1), respectively.
