Professor Eunah Choi's research lab specializes in analytical and clinical nutrition science, with a focus on the assessment of food additives, dietary components, and their impact on chronic disease risk in specific populations. The lab develops and validates sensitive, high-throughput analytical methods—primarily using LC-MS/MS and GC-MS—for detecting food contaminants such as synthetic colorants, non-nutritive sweeteners, and propylene glycol in food matrices. A key research direction involves investigating the associations between dietary intake (e.g., calcium, hormone therapy) and health outcomes, particularly in postmenopausal women and individuals with genetic conditions like Turner syndrome. The lab integrates analytical chemistry with epidemiological data from national health surveys to support public health policy and food safety regulation.

An improved method for the analysis of propylene glycol (PG) in foods using a gas chromatography-flame ionisation detector (GC-FID), with confirmation by GC-MS, was validated by measuring several analytical parameters. The PG concentrations in 1073 products available in Korean markets were determined.
