研究室紹介

Professor Eunah Choi's research lab specializes in analytical and clinical nutrition science, with a focus on the assessment of food additives, dietary components, and their impact on chronic disease risk in specific populations. The lab develops and validates sensitive, high-throughput analytical methods—primarily using LC-MS/MS and GC-MS—for detecting food contaminants such as synthetic colorants, non-nutritive sweeteners, and propylene glycol in food matrices. A key research direction involves investigating the associations between dietary intake (e.g., calcium, hormone therapy) and health outcomes, particularly in postmenopausal women and individuals with genetic conditions like Turner syndrome. The lab integrates analytical chemistry with epidemiological data from national health surveys to support public health policy and food safety regulation.

Abstract This study aimed to identify the prevalence of sarcopenia, obesity, and sarcopenic obesity and examine their association with radiographic knee osteoarthritis (OA) and knee pain in Korean postmenopausal women. This cross-sectional study utilized the data from Korean National Health and Nutrition Examination Surveys 2009–2011. The participants were categorized into 4 groups based on body composition: either sarcopenic (appendicular skeletal muscle < 23%) or not, either obese (body mas

Synthetic colourants are highly regulated due to their correlation with a variety of health hazards. Regulatory services must be able to detect the substances in a cost-effective, efficient, and sensitive manner. LC-UV and LC-MS/MS methods have been developed to simultaneously detect five illegal colourants in foods, such as: citrus red II, diethyl yellow, dimethyl yellow, metanil yellow, and rhodamine B. This method showed good linearity (<i>R</i> 2 > 0.99) and low limits of detectio

SJR Q2Food Additives & Contaminants Part A

An improved and highly sensitive method was developed and validated for the determination of 12 (7 permitted and 5 non-permitted in Korea) non-nutritive sweeteners in various foods using liquid chromatography-electrospray ionisation-tandem mass spectrometry. The chromatographic separation was performed on an Xbridge BEH C18 column (3 mm × 100 mm, 2.5 μm) with gradient elution using 10 mM ammonium acetate in water and 10 mM ammonium acetate in methanol. Sample preparation consisted of simple dilu

We aimed to evaluate the association between daily dietary calcium intake and the risk of cardiovascular disease (CVD) in postmenopausal women using data from the Korean National Health and Nutrition Examination Survey (KNHANES). This cross-sectional study included 12,348 women aged 45-70 years who had reached natural menopause. They were classified into three groups according to daily dietary calcium intake: <400 mg, 400-800 mg, and >800 mg. The risks of CVD, stroke, angina, and myocardial infa

An improved method for the analysis of propylene glycol (PG) in foods using a gas chromatography-flame ionisation detector (GC-FID), with confirmation by GC-MS, was validated by measuring several analytical parameters. The PG concentrations in 1073 products available in Korean markets were determined. PG was detected in 74.1% of the samples, in a concentration range from the limit of detection (n.d., 0.39 μg ml(-1)) to 12,819.9 mg kg(-1). The Korea National Health and Nutrition Examination Surve
