Professor Jae Hwan Lee's research lab specializes in lipid chemistry, oleogel development, and antioxidant activity in food systems. The lab investigates the physical and oxidative stability of structured lipids, including organogels and solid fat blends, with a focus on natural waxes and polymers like ethylcellulose. Research also extends to the identification and characterization of volatile flavor compounds in oils and beverages, as well as the antioxidant and anti-obesity properties of natural plant extracts such as *Artemisia princeps* (ssuk). The lab employs advanced analytical techniques such as HS-SPME-GC-MS, DPPH/ABTS assays, and electronic nose/electronic tongue systems to evaluate food quality, stability, and sensory attributes.

Physicochemical properties and oxidative stability of oleogels made of carnauba wax with canola oil or beeswax with grapeseed oil

Two types of oleogels—made of carnauba wax with canola oil or beeswax with grapeseed oil—were prepared at concentrations from 0 to 15% (w/w) of wax. Physical characterization was done and oxidative stability of the oleogels were evaluated. As the proportion of wax increased from 5 to 15%, the enthalpy of crystallization and melting increased in both oleogels. Analysis of Volatile Compounds from Chlorophyll Photosensitized Linoleic Acid by Headspace Solid-phase Microextraction (HS-SPME)

Volatile compounds from linoleic acid with or without added 5 ppm chlorophyll under light and in the dark were studied by headspace-solid phase microextraction (HS-SPME)-gas chromatography (GC)-mass spectrometry (MS). Coefficient of variation (R2) for the total peak areas by HS-SPME was 1.8%. Oxidative Stability of Solid Fats Containing Ethylcellulose Determined Based on the Headspace Oxygen Content

Solid fat was developed by blending fullyhydrogenated soybean oil, palm oil, and canola oil, andorganogels were prepared using selected solid fats andethylcellulose. Radical Scavenging Activity and Anti-obesity Effects in 3T3-L1 Preadipocyte Differentiation of Ssuk (Artemisia princeps Pamp.) Extract

Radical scavenging activity of ethanol extracts from ssuk (Artemisia princeps Pampan.) was determined by 2,2-diphenyl-1-pycryl-hydrazil (DPPH) and 2,2'-azinobis(3-ethylbenzthiazoline-6-sulphonic acid) (ABTS) methods. Also, anti-obesity effects of ssuk extract were tested in vitro using 3T3-L1 preadipocyte cells. Antioxidant and Prooxidant Activities of β-Carotene in Accelerated Autoxidation and Photosensitized Model Systems

Antioxidant or prooxidant activity of β-carotene was studied in autoxidized or methylene blue photosensitized lard using the depletion of headspace oxygen, p-anisidine value (p-AV), or a modified DPPH methods. β-Carotene of 1.25 and 2.50 μM significantly decreased headspace oxygen and β-carotene from 0.25 to 2.50 μM increased significantly p-AV in lard oxidized at 60oC for 60 h (p<0.05), implying β-carotene acted prooxidantly. β-Carotene under 0.25 μM in oxidized lard did not decrease the absorb

Pale ale류에 속하는 맥주 신제품의 이화학적 특성 평가

Pale ale류에 속하는 수입산 시판 맥주 3종과 신제품 맥주를 대상으로 일반적 품질특성과 향기패턴 및 맛의 성향을 비교하였다. 그 결과 신제품은 4.35%의 알콜 함량을 나타냈으며 B.U.는 3.5, 색도는 34.43(EBC), sweetness는 2.28oP, pH는 3.96, 총산은 5.21, 폴리페놀은 181.22 mg/L의 함량을 보였다. 전자코에 의한 향기패턴의 경우 시판 맥주와는 구분되어 다른 향기특성을 갖는 것으로 나타났으며, GC를 이용한 총 14종의 휘발성분 중 ethyl acetate, isobutanol, isoamyl acetate, isoamyl alcohol, ethyl hexanoate 함량의 차이를 보였고 그 외 물질들은 시판 맥주와 유사한 것으로나타났다. 전자혀 분석에서는 시판 맥주에 비하여 NB의 신맛이부족한 것으로 나타났으며 맥주의 주요한 쓴맛을 나타내는 성분중 하나인 quinine을 정량 한 결과 시판 맥주에서의 농도는 1.5- 1.8 mg/L

Evaluation of solvent effects on the DPPH reactivity for determining the antioxidant activity in oil matrix

Reactivity of 2,2-diphenyl-1-picrylhydrazyl(DPPH) radical in methanol, ethanol, isopropanol, isooctane,and ethyl acetate, was evaluated to assess theantioxidant capabilities in medium chain triacylglycerol. DPPH loss values were obtained over 30 min, with samplingevery 5 min. Even the same concentration ofantioxidants showed different DPPH reactivity dependingon solvent. Compositional Analysis of Walnut Lipid Extracts and Properties as an Anti-cancer Stem Cell Regulator via Suppression of the Self-renewal Capacity

Colon cancer is a leading cause of cancer-related deaths worldwide. Effects of walnut (Juglans regia L.) lipid extracts (WLEs) on the self-renewal capacity of cancer stem cells (CSCs) in colon cancer were investigated. The dominant component of WLEs was α-linoleic acid (64.6%), followed by α-linolenic acid (14.6%), and oleic acid (12.6%). Correlation of Volatiles and Fatty Acids in Thermally Oxidized Fatty Acid Model Systems Using Statistical Approaches

Distributions of volatiles and fatty acids from thermally oxidized free fatty acids (FFA) at 93℃ for 200min were analyzed and results were statistically compared using principal component analysis (PCA) and multiple factor analysis (MFA).
