Professor Kim Jong-geon's research lab focuses on functional foods, probiotics, and nutritional interventions to improve metabolic health and prevent lifestyle-related diseases. Key research directions include the hypocholesterolemic effects of probiotics—particularly those isolated from traditional Korean fermented foods like kimchi—and their mechanisms in regulating lipid metabolism. The lab also investigates the anti-osteoporotic potential of bioactive dairy proteins and the impact of dietary factors, such as food waste in animal feed, on meat quality and human health. Additionally, the lab explores musculoskeletal health through exercise and environmental interventions in sedentary populations.

This study examined the efects of Lactobacillusacidophilus ATC 43121 (LAB) on cholesterol metabolismin hypercholesterolemia-induced rats. Four treatment groupsof rats (n=9) were fed experimental diets: normal diet,normal diet+LAB (2×106cholesterol, w/w), and hypercholesterol diet+LAB. Milk is known as a safe food and contains easily absorbable minerals and proteins, including whey protein, which has demonstrated antiosteoporotic effects on ovariectomized rats. Meat Quality Traits of Pigs Finished on Food Waste

Despite the benefits associated with the use of food waste (FW), there are mixed consumer perceptions regarding pork quality harvested from pigs fed FW. Twenty crossbred pigs were selected for the present study. Ten pigs were fed a conventional diet (control group), and the other 10 pigs were given a conventional diet and FW (FW group) during different growth stages.
