研究室紹介

Professor Sang Ho Yu's research lab specializes in bioinorganic chemistry and food science, focusing on the design of artificial metalloenzymes for selective protein cleavage and the development of natural-based functional ingredients to enhance meat quality and safety. The lab investigates lipid oxidation, antioxidant and antimicrobial properties in meat systems, particularly pork, under various processing and storage conditions, while also addressing critical public health issues such as antibiotic resistance in foodborne pathogens. Their interdisciplinary work bridges synthetic biology, food technology, and microbiology to develop sustainable and safe food systems.

Artificial Metalloprotease with Active Site Comprising Aldehyde Group and Cu(II)Cyclen Complex
Sang Ho Yoo, Byoung June Lee, Hyun Sook Kim, Junghun Suh
SJR Q1Journal of the American Chemical Society

To design artificial proteases that cleave peptide backbones of a wide range of proteins at selected sites, artificial active sites comprising the Cu(II) complex of cyclen (Cu(II)Cyc) and aldehyde group were synthesized on a cross-linked polystyrene. The aldehyde group was employed as the binding site in view of its ability of reversible formation of imine bonds with epsilon-amino groups of Lys residues exposed on the surface of proteins and Cu(II)Cyc as the catalytic group for peptide hydrolysi

Physicochemical Properties, and Antioxidant and Antimicrobial Effects of Garlic and Onion Powder in Fresh Pork Belly and Loin during Refrigerated Storage
S.Y. Park, Sang-Ho Yoo, Jae‐Han Shim, Koo Bok Chin
SJR Q1Journal of Food Science

Pork loin and belly cuts were pumped to 110% of their original weight with solutions containing 5% of various ingredients (sodium ascorbate, garlic, and onion powder), and evaluated the physicochemical properties, and antioxidant and antimicrobial activities during refrigerated storage at 8 degrees C. The addition of garlic and onion powder tended to increase redness (a) and yellowness (b) in both the belly lean and loin with the exception of a few cases. Free fatty acid values in both pork bell

Evaluation of Lipid Oxidation and Oxidative Products as Affected by Pork Meat Cut, Packaging Method, and Storage Time during Frozen Storage (−10 °C)
S.Y. Park, Sang-Ho Yoo, Ji-hyun Uh, Jong‐Bang Eun, H.C. Lee, Y.J. Kim, Koo Bok Chin
SJR Q1Journal of Food Science

Lipid oxidation and oxidative volatiles as affected by pork meat cut and packaging method during frozen storage at -10 degrees C were evaluated. Pork belly cut had higher thiobarbituric acid reactive substance (TBARS) and pH values than did the loin, whereas the loin had higher free fatty acid (FFA) values than that of the belly cut. Peroxide values increased with increased storage time, but were not affected by pork meat cut and packaging method. Volatiles with carbon numbers less than 10 in th

Effects of Pork Meat Cut and Packaging Type on Lipid Oxidation and Oxidative Products during Refrigerated Storage (8 °C)
S.Y. Park, Y.J. Kim, H.C. Lee, Sang-Ho Yoo, Jae‐Han Shim, Koo Bok Chin
SJR Q1Journal of Food Science

Lipid oxidation and oxidative products as affected by pork meat cut, packaging method, and storage time were evaluated during refrigerated storage. Pork belly had higher pH and thiobarbituric acid reactive substance (TBARS) values than pork loin, and aerobic-packaged belly had higher TBARS than vacuum-packaged counterparts. Loin had higher free fatty acid (FFA) values than belly, and increased FFA values were observed with increased storage time. Peroxide values increased up to 7 d and decreased

SJR Q3Microbiology ResearchOA

Antibiotic resistance in Escherichia coli is a global health concern. We studied all possible routes of cross contamination of broiler meat with resistant E. coli from broiler feces at poultry shops. Various sample categories namely poultry feces, meat (n=225 for each), slaughterer hands, consumer hands, slaughterer knife, canister, tap water, carcass, feed and drinking water (n=50 for each) were collected from local poultry processing market. Samples were screened for prevalence of E. coli, res

Performance of large language models in non-English medical ethics-related multiple choice questions: comparison of ChatGPT performance across versions and languages
Y.L. Kim, Seungho Shin, Sang-Ho Yoo
SJR Q1BMC Medical EthicsOA

BACKGROUND: As large language models (LLMs) evolve, assessing their competence in ethically sensitive domains such as medical ethics has become increasingly important. Since medical ethics is a universal component of medical education, disparities in AI performance across languages may result in unequal benefits for learners. Therefore, it is essential to examine performances in non-English contexts. While previous studies have evaluated performance of Chat Generative Pre-trained Transformer(Cha

SJR Q1PLoS ONEOA

This qualitative study explored the role and limitations of families as mediators of medical communication among cancer patients in South Korea. Semi-structured interviews were conducted with 46 participants including patients, family members, doctors, and nurses. This study examined how families alleviate communication burdens and navigate power dynamics between patients and physicians. The findings revealed that families gather, interpret, and translate medical information, often acting as int

In this paper, ethical principles and practice guidelines concerning the usage of public database for medical researches were developed and proposed. Although there are several personal health databases with comprehensive information of each individual, researches aiming at public good are often hindered because of legal, managerial and technical barriers to the usage of public databases. Ethical principles and guidelines are indispensible to promote medical research that will benefit society wh
