Professor Yongsoon Park's research lab focuses on the intersection of clinical nutrition, metabolic health, and cardiovascular disease prevention. Key research directions include the role of bioactive fatty acids—particularly n-3 polyunsaturated fatty acids (EPA and DHA)—in modulating platelet function and inflammation, as well as their impact on lipid metabolism and postprandial triacylglycerol responses. The lab also investigates the effects of dietary bioactive compounds, such as conjugated linoleic acids and sorghum phytochemicals, on metabolic regulation, insulin sensitivity, and nutrient partitioning. Additionally, the lab examines nutritional status and its implications in chronic diseases, particularly protein-energy wasting in end-stage renal disease patients.

15This study suggests that MPV response to low-dose collagen may be a useful indicator of platelet propensity to activation. Further studies are warranted to correlate MPV with classical platelet aggregation tests and with the use of platelet-active drugs.
