연구실 소개

강혜진 교수의 연구실은 주로 식품 안정성 및 생물학적 활성 물질의 기능성 향상을 위한 생체활성 코팅 기술과 생체막 단백질인 G-단백질 결합 수용체(GPCR)의 기능 및 신호전달 메커니즘을 중심으로 연구를 진행하고 있습니다. 특히 견과류의 지용산 산화 방지를 위한 천연성분 기반 코팅 개발과, 대사질환 치료에 잠재력을 지닌 특정 수용체(GPR40, GPR120, GLP-1R 등)의 기능 규명이 핵심 과제입니다. 또한 신경전달물질 수용체인 메타보트로픽 글루타메이트 수용체(mGluR)의 리간드 특이성과 세포 내 신호전달 경로의 기작 규명을 통해 신경질환 및 대사질환의 이해를 심화하고 있습니다.
