연구실 소개

김정목 교수의 연구실은 주로 천연물 성분의 항균 작용과 식품 안전성 향상에 초점을 맞추고 있으며, 에센셜 오일 성분인 카바크롤, 시트랄, 테라놀 등이 병원성 박테리아에 미치는 세균살상 효과를 체계적으로 분석하고 있습니다. 또한 항생제 내성 박테리아나 식품에 오염된 병원균의 제거를 위한 천연물 기반 소독제 개발에도 주력하고 있습니다. 최근에는 미생물의 단백질 분해 경로와 세포 신호 전달 메커니즘에 관한 분자생물학적 연구도 확장하고 있습니다.

Antibacterial Activity of Carvacrol, Citral, and Geraniol against Salmonella typhimurium in Culture Medium and on Fish Cubes

ABSTRACT Carvacrol, citral and geraniol showed potent antibacterial activity against Salmonella typhimurium and its rifampicin‐resistant (Rif R ) strain as determined in txyptic soy broth and by zone of inhibition on agar‐based medium. Carvacrol had the most potent bactericidal activity, with minimum inhibitory and bactericidal concentrations (MIC and MBC) of 250 μg/mL for both tester strains. Rgs2, a regulator of G proteins, lowers blood pressure by decreasing signaling through Gαq. Human patients expressing Met-Leu-Rgs2 (ML-Rgs2) or Met-Arg-Rgs2 (MR-Rgs2) are hypertensive relative to people expressing wild-type Met-Gln-Rgs2 (MQ-Rgs2). In bacteria, nascent proteins bear the pretranslationally generated N-terminal (Nt) formyl-methionine (fMet) residue. Nt-fMet of bacterial proteins is a degradation signal, termed fMet/N-degron. ABSTRACT The effect of chlorine dioxide (ClO 2 ) treatment on nutrients of seafood was studied using Atlantic salmon ( Salmo salar ) and red grouper ( Epinephelus morio ) with five volumes (1:5, w/v) of aqueous ClO 2 at 20, 40,100, and 200 ppm ClO 2 in 3.5% brine for 5 min.
