연구실 소개

류지훈 교수의 연구실은 식품 유해미생물, 특히 대장균 O157:H7의 생존 메커니즘과 제거 기술에 중점을 두고 있습니다. 특히 펌프, 생물막 형성에 관여하는 커리 및 엑스트라세포리큘러 폴리사카라이드(EPS)가 세균의 소독제 내성에 미치는 영향를 규명하며, 식품 안전성을 높이기 위한 첨단 소독 기술 개발을 진행하고 있습니다. 또한 뿌리 채소 종자에 대한 염소다이옥사이드 처리와 건조-열처리 병행 기술을 통해 병원성 대장균을 효과적으로 제거하면서도 종자 생존율을 유지하는 방법을 개발하고 있습니다.

The resistance of Escherichia coli O157:H7 strains ATCC 43895-, 43895-EPS (an exopolysaccharide [EPS]-overproducing mutant), and ATCC 43895+ (a curli-producing mutant) to chlorine, a sanitizer commonly used in the food industry, was studied. Planktonic cells of strains 43895-EPS and/or ATCC 43895+ grown under conditions supporting EPS and curli production, respectively, showed the highest resistance to chlorine, indicating that EPS and curli afford protection. AIMS: The aim of this study was to determine the role of curli in attachment and biofilm formation by Escherichia coli O157:H7 on stainless steel.
