Dietary assessment methods in epidemiologic studies
Jee‐Seon Shim, Kyungwon Oh, Hyeon Chang Kim
SJR Q2Epidemiology and HealthOA

Diet is a major lifestyle-related risk factor of various chronic diseases. Dietary intake can be assessed by subjective report and objective observation. Subjective assessment is possible using open-ended surveys such as dietary recalls or records, or using closed-ended surveys including food frequency questionnaires. Each method has inherent strengths and limitations. Continued efforts to improve the accuracy of dietary intake assessment and enhance its feasibility in epidemiological studies ha

SJR Q1NutrientsOA

There is growing evidence for a global transition to a more highly processed diet. While the dietary share of ultra-processed foods depends on a country's economic status, food choice and consumption are also influenced by the socioeconomic situation of individuals. This study investigated whether ultra-processed food consumption differed across socioeconomic subgroups and over time (2010-2018) in Korea. Cross-sectional data from the Korea National Health and Nutrition Examination Survey 2010-20

The Korean Journal of Nutrition

Although food insecurity might be associated with poor dietary intake, this relationship has not been researched in Korea. This study examined the association of food security with dietary intake from the third Korea National Health and Nutrition Examination Survey. Food security was measured by a self-reported hunger measure on the dietary situation of subjects' households in the previous year and approximately 2/3 of the subjects lived in food-insecure households. Dietary intake was based on a

SJR Q1Journal of the Academy of Nutrition and DieteticsOA

BACKGROUND: Food environments have changed rapidly, and the global interest in ultra-processed foods has increased. Ultra-processed foods are typically energy dense, high in sugars and fat, and low in fiber, protein, minerals, and vitamins. OBJECTIVE: This study aimed to estimate the energy contribution of ultra-processed foods in the diet of Korean adults and to examine the association between ultra-processed food consumption and dietary intake and diet quality. DESIGN: This study is a secondar

Although the etiologies of cardiovascular disease (CVD) are widely understood, the goal of finding a globally effective solution for preventing CVD is unrealistic. Therefore, we aimed to conduct a community-based prospective study on the prevention and management of CVD in Korean adults. This study was designed to recruit 8,000 healthy adults over the course of 5 years. The baseline assessment includes a wide range of established CVD risk factors, including demographic characteristics, medical h

SJR Q1Clinical HypertensionOA

BACKGROUND: Although dietary modification is strongly recommended for prevention and treatment of hypertension, little is known about which factors are associated with adherence to dietary guidelines. We investigated knowledge and attitude, perceived benefits of, barriers to, and self-efficacy of dietary therapy, and identified the factors associated with dietary adherence among adults with and without hypertension. METHODS: We collected information on the knowledge/attitudes and perceived benef

Mortalities from cardiovascular disease in Korea have decreased markedly over the past three decades. The major cardiovascular and metabolic risk factors, however, remain prevalent, and their burden on health is large. The Cardiovascular and Metabolic Diseases Etiology Research Center (CMERC) planned a cohort study in order to identify novel risk factors and to develop evidence-based prevention strategies of cardiovascular and metabolic diseases. The CMERC deliberately designed two prospective c

This study was conducted to validate the semi-quantitative food frequency questionnaire that was developed to assess the intakes of fatty acids, as well as energy, carbohydrates, fat, protein, minerals and vitamins in Korean adults. The validity of the semi-quantitative food frequency questionnaire was tested on 78 subjects (31 men, 47 women) aged 34 to 66 years. The semi-quantitative food frequency questionnaire included 93 food items and was validated on two 3-day dietary records. The mean int

SJR Q1Clinical HypertensionOA

Abstract Objectives Hypertension control is a major public health concern. Daily preventive practices of the affected individual are essential for controlling blood pressure (BP). We investigated the association of diet management practice, dietary quality, and BP control among Korean adults with known hypertension. Methods We included 4107 participants aged 40–79 years who reported physician-diagnosed hypertension in the Korea National Health and Nutrition Examination Survey 2013–2016. Dietary

BACKGRUOUND: This study aimed to investigate the association between consumption of ultra-processed foods (UPF) and obesity in Korean adults. METHODS: We included the Cardiovascular and Metabolic Diseases Etiology Research Center cohort study baseline data of adults aged 30 to 64 years who completed a validated food frequency questionnaire. UPF was defined using the NOVA food classification. Multivariable linear and logistic regression analyses were performed to assess the association of dietary

Ultra-Processed Food Consumption and Obesity: A Narrative Review of Their Association and Potential Mechanisms
Jee‐Seon Shim
SJR Q1Journal of Obesity & Metabolic SyndromeOA

Obesity is a major global health concern, with diet playing a crucial role in its development and treatment. Ultra-processed foods (UPFs) have become prevalent in diets due to changes in the food environment. These foods are energy-dense; high in fat, sugars, or salt; and low in fiber, protein, vitamins, and minerals, raising concerns about their effects on health. In addition to traditional research focused on nutrients, food, and dietary quality, growing evidence has linked UPF consumption to
