연구실 소개
최종훈 교수의 연구실은 자연물에서 유래한 생활학적 물질의 생리활성 메커니즘을 규명하고, 이를 바탕으로 염증성 질환과 대사질환의 예방 및 치료 전략을 개발하는 데 초점을 맞추고 있습니다. 특히 라이코리스, 마늘 등 천연식물의 열처리 유도 활성성분이 면역 및 염증 반응에 미치는 영향을 분자생물학적·분석화학적 접근으로 연구하고 있으며, 장내 미생물군과의 상호작용 메커니즘 또한 탐구하고 있습니다. 이와 더불어 식품 및 의약소재의 안전성과 효능을 높이기 위한 최적의 가공 조건 최적화도 핵심 연구 과제입니다.

15The anti-inflammatory activity of licorice (LE) and roasted licorice (rLE) extracts determined in the murine phorbol ester-induced acute inflammation model and collagen-induced arthritis (CIA) model of human rheumatoid arthritis. rLE possessed greater activity than LE in inhibiting phorbol ester-induced ear edema. ABSTRACT The principal antiyeast compound of heated garlic was isolated and identified by high‐performance liquid chromatography (HPLC) and gas chromatography‐mass spectrometry (GC‐MS) as allyl alcohol (2‐pro‐pene‐1‐ol). ABSTRACT: The appearance of antiyeast activity in heated garlic extract was influenced by the temperature, heating time, and pH.
