연구실 소개

이민석 교수의 연구실은 육류의 품질과 생화학적 특성 간의 상관관계를 규명하고, 특히 주요 근육 부위 간의 품질 변동성과 맛의 특성에 영향을 미치는 요인을 분석하는 데 초점을 맞추고 있습니다. 또한, 식품 안전성 향상을 위한 천연 항균제(예: 식물성 추출물, 에센셜 오일)의 복합적 효과와 그 기전에 대한 연구도 진행하고 있습니다. 이와 더불어, 식품의 가공 과정에서 영양소나 기능성 성분이 어떻게 변화하는지에 대한 분석을 통해 소비자에게 실질적인 건강 혜택을 제공할 수 있는 제품 개선 전략을 모색하고 있습니다.
