연구실 소개
이남근 교수 연구실은 3D 식품 프린팅 기술을 핵심으로 하여, 식품 소재의 점도, 열 안정성, 기계적 성질 등 물리화학적 특성을 제어함으로써 복잡한 구조와 기능성을 가진 식품을 정밀하게 제작하는 데에 초점을 맞추고 있습니다. 특히 식물성 단백질, 천연 고분자(나노셀룰로오스, 알긴산, 페아틴 등) 및 꿀벌왁 기반 올레오젤을 활용한 식품 잉크 개발과 그 인쇄 정밀도 및 기계적 품질 제어에 대한 연구를 진행하고 있습니다. 또한, 항균성 및 기능성 섬유 매트 제작을 통한 식품 포장 및 기능성 식품 소재의 개발도 함께 추진하고 있습니다.
