Language and Cognitive Predictors of Text Comprehension: Evidence From Multivariate Analysis
Young Suk Kim
SJR Q1Child Development

Using data from children in South Korea (N = 145, Mage = 6.08), it was determined how low-level language and cognitive skills (vocabulary, syntactic knowledge, and working memory) and high-level cognitive skills (comprehension monitoring and theory of mind [ToM]) are related to listening comprehension and whether listening comprehension and word reading mediate the relations of language and cognitive skills to reading comprehension. Low-level skills predicted comprehension monitoring and ToM, wh

Relations Among Oral Reading Fluency, Silent Reading Fluency, and Reading Comprehension: A Latent Variable Study of First-Grade Readers
Youngsuk Kim, Richard K. Wagner, Elizabeth Foster
SJR Q1Scientific Studies of ReadingOA

The present study examined oral and silent reading fluency and their relations with reading comprehension. In a series of structural equation models (SEM) with latent variables using data from 316 first-grade students, (1) silent and oral reading fluency were found to be related yet distinct forms of reading fluency; (2) silent reading fluency predicted reading comprehension better for skilled readers than for average readers; (3) list reading fluency predicted reading comprehension better for a

Does growth rate in oral reading fluency matter in predicting reading comprehension achievement?
Youngsuk Kim, Yaacov Petscher, Christopher Schatschneider, Barbara R. Foorman
SJR Q1Journal of Educational Psychology

In this study, we examined the relationship of growth trajectories of oral reading fluency, vocabulary, phonological awareness, letter-naming fluency, and nonsense word reading fluency from 1st grade to 3rd grade with reading comprehension in 1st, 2nd, and 3rd grades. Data from 12,536 children who were followed from kindergarten to 3rd grade longitudinally were used. These children were administered Dynamic Indicators of Basic Early Literacy Skills subtests, Peabody Picture Vocabulary Test-Third

Volatile Compounds in Fermented and Acid‐hydrolyzed Soy Sauces
S.M. Lee, Byoung-Boo Seo, Young Suk Kim
SJR Q1Journal of Food Science

ABSTRACT: Volatile compounds in fermented and acid‐hydrolyzed soy sauces were isolated and analyzed using solvent extraction and solid‐phase microextraction. Quantitatively, alcohols and esters were dominant in the volatiles of fermented soy sauce, whereas heterocyclic compounds, including pyrazines and furans, and acids were relatively abundant in the acid‐hydrolyzed soy sauce. The odor‐active compounds were also evaluated. The major odor‐active compounds of fermented soy sauce were acetic acid

Comparative Antioxidant and Antiproliferative Activities of Red and White Pitayas and Their Correlation with Flavonoid and Polyphenol Content
HyoenJi Kim, Hyung‐Kyoon Choi, Jeong Yong Moon, Young Suk Kim, Ashik Mosaddik, Somi Kim Cho
SJR Q1Journal of Food Science

Pitaya, commonly known as dragon fruit, has generated considerable consumer interest because of its attractive color and micronutrient content. The present study investigated the total polyphenol and flavonoid content, antioxidant activity against various free radicals, and antiproliferative effect on several cancer cell lines of extracts of flesh and peel of white and red pitayas, collected from Jeju Island, Korea. The total polyphenol and flavonoid contents of 80% methanol extracts of red pita

Evaluating the Dimensionality of First-Grade Written Composition
Youngsuk Kim, Stephanie Al Otaiba, Jessica Sidler Folsom, Luana Greulich, Cynthia S. Puranik
SJR Q1Journal of Speech Language and Hearing Research

PURPOSE: This study examined dimensions of written composition by using multiple evaluative approaches such as an adapted 6 + 1 trait scoring, syntactic complexity measures, and productivity measures. It further examined unique relations of oral language and literacy skills to the identified dimensions of written composition. METHOD: A large sample of 1st-grade students (N = 527) was assessed on their language, reading, spelling, letter writing automaticity, and writing in the spring. Data were

Phonological awareness and literacy skills in Korean: An examination of the unique role of body-coda units
Youngsuk Kim
SJR Q1Applied Psycholinguistics

This study examines a salient intrasyllabic phonological unit in Korean, the body-coda unit, its role in literacy skills in Korean, and a possible source of the salience of body-coda units in the spoken language. Data were collected from Korean-speaking, monolingual beginning readers (41 kindergarteners, 40 first graders). The results indicate that body-coda boundary (e.g., ca-t ) is more salient than onset–rime boundary (e.g., c-at ) for Korean children and show that children's body-coda awaren

Toward an understanding of dimensions, predictors, and the gender gap in written composition.
Youngsuk Kim, Stephanie Al Otaiba, Jeanne Wanzek, Brandy Gatlin
SJR Q1Journal of Educational PsychologyOA

We had three aims in the present study: (1) to examine the dimensionality of various evaluative approaches to scoring writing samples (e.g., quality, productivity, and curriculum based writing [CBM]) , (2) to investigate unique language and cognitive predictors of the identified dimensions, and (3) to examine gender gap in the identified dimensions of writing. These questions were addressed using data from second and third grade students (<i>N</i> = 494). Data were analyzed using confirmatory fa

Comparison of Fermented Soybean Paste ( Doenjang ) Prepared by Different Methods Based on Profiling of Volatile Compounds
Ye‐Jin Jo, In Hee Cho, Chi Kwang Song, Hye Won Shin, Young Suk Kim
SJR Q1Journal of Food ScienceOA

In this study, 2 different extraction methods, namely solvent-assisted flavor evaporation (SAFE) and solid-phase microextraction (SPME), were employed to investigate the comprehensive volatile profile of Doenjang (one of Korean fermented soybean pastes) efficiently. Quantitatively, major volatiles of Doenjang isolated by SAFE were 3-methylbutanoic acid, butanoic acid, 3-hydroxy-2-methyl-4H-pyran-4-one (maltol), ethyl 2-methylbutanoate, 2-methylpropanoic acid, tetramethylpyrazine, and 4-ethyl-2-m

SJR Q1Journal of Agricultural and Food Chemistry

The characteristic aroma-active compounds in raw and cooked pine-mushrooms (Tricholoma matsutake Sing.) were investigated by gas chromatography-olfactometry using aroma extract dilution analysis. 1-Octen-3-one (mushroom-like) was the major aroma-active compound in raw pine-mushrooms; this compound had the highest flavor dilution factor, followed by ethyl 2-methylbutyrate (floral and sweet), linalool (citrus-like), methional (boiled potato-like), 3-octanol (mushroom-like and buttery), 1-octen-3-o
