이 논문은 ‘맛'과 ’향'에 대한 감각적 경험이 어떻게 언어적으로 구성되는지를 논의하기 위하여, 현대 한국사회의 대표적인 기호 식품 중 하나인커피를 대상으로 언어인류학적인 분석을 시도한다. 특히 맛과 향이라는 일상적이고 신체적인 감각이 어떻게 경험되고 소통되는지를 알아보기 위하여 커피 향미에 대한 언어적인 표현과 언어적 상호작용을 분석한다. 여기서특정 커피 향미를 분류하고 표현하기 위해 사용되는 전문적 커피 향미 용어는 단순히 그 향미의 자질을 지시하고 표현할 뿐만 아니라, 화자의 사회적 위치나 정체성을 나타내는 지표성을 가지고 있음에 주목한다. 구체적으로 이 논문은 커피 향미의 분별을 가르치는 커피전문가와 수강생들의 언어적 상호작용을 분석하여, 커피전문가가 어떠한 언어 전략을 통해 일반인들의 감각적인 경험을 정의하고 규정하는지, 나아가 그러한 언어적인 상호작용을 통해서 어떻게 커피에 대한 전문성과 감식안의 권위와 위세가 구성되고 재확인되는지 살펴본다.
